Staining tiger maple cabinet

I am refinishing for a customer an old Am. Hepplewhite chest. The top and sides are each made of a single plank of fiddle-back or tiger maple, approx. 22" x 60" (yes, really- not glued up). Sorry, I really had to strip it. What kind of stain will emphasize and show off the tiger-stripes. I'd like to use a gel stain because its so easy, but I dont want to mask the figure. I also have available NGR (alcohol) stains. Incidently, the wood color looks like cherry, no matter how much I sand it. But the grain sure is maple, with the figure on both sides of the wood, with the center being like plain-sliced maple. Thanks for any comments! Bernie.
