The statement that red oak was rarely used in antique furniture seems to me to be unprovable by the 52 oak items in my shop that are known to be oak. All the mission I inspected is red oak, 90 % of the victorian furniture is red oak with 10 % of the parts being white oak ( and this was veneer) and ash. As for the detection of red verses white oak, look at the grain closely, a fine wire will run unobstructed from one end of the board to the other, don't look at the color as red oak fades its pink and tan colors after taht many years. The cause of the deep furrows in the table top is common with heavy use of red oak. A grain filler will help remove this effect, since white oak has such a tight grain comparativly, it would not produce this result. Good luck, James.
