Pickling came from the steel industry. After steel is formed, it is washed in a bath of acid to remove the outer scale and the result is the color of steel as we know it. I believe that color and that look of being 'washed' is why the term is used in the area of painting and since it is a chemical reaction, the term is also applied to the food industry where a cucumber is soaked in brine and is chemically altered to preserve it.
