Most polyurethanes are just modified alky varnishes with plasticizers added, not rubber....they don't "seal" the wood any more than other conventional film finishes....shellac is a great finish..but no where near as protective as a modified Varnish (be it Tung oil, Alkyd, or any other combo..) or any of several other choices you could make for a table top...
