I believe you will have to start over, there may be a chemical from the stripper that remains in the wood, or the stain didn't dry entirely. You will need to read all the labels and figure out what went wrong. I don't use poly, but that sounds like a finish rejection to me, and I don't think extra coats or sanding will improve the look, did it dry completely?
