Woodworkers Supply has two types of sheet veneer and one with a PSA adhesive (peel and stick) in Cherry up to 4'x8'. The "Allwood" is a 2 ply that I have used before to reveneer a mahagony shelled drum set (I used Ash),and to skin a door, and is really high quality stuff. I agree with James about contact adhesive for wood veneers..stay away and I wouldn't choose the PSA either. A white glue like WeldBond will work and give you plenty of time to position and clamp, and Woodworkers also sells something called FSV adhesive that looks promising. If the top is flat then it shouldn't be a huge deal to tape the veneer in place after setting it in the glue, and then put a piece of 3/4" Birch ply over it and either clamp with cauls across the top of it or weight it evenly till set....because it's two ply..it behaves pretty well when gluing up.
