Heat should not change the color of the marble, or granit for that matter. Unless it is just a finish on the stone, but to shift the stone color would take a lot more heat than you could generate in your normal fire place to make that happen. The cause is likely from smoke, a bittle baking soda and vinegar might do the trick, but a scrubbing of chlorine bleach will work as a last resort, and rinse with distilled warer. As for the next time, I quess some wax may help keep the smoke from attaching to the stone, but if there is very much heat then I don't think there is much you can do about it.
