You stated that the whole piece was walnut veneer except for the back....so really you needn't worry about the cedar under that. The cedar back could be stained fine....I'd use a gel stain as it's a urethane sealer as well. 2 coats of gel stain and then a paste wax make a nice satin look for something like that back. Alcohol won't degrease...or de-oil....as well as something like Wil-Bond as cedar has turpenes in it and they're not really alcohol soluble. If you use shellac, use a thinned dewaxed garnet ...it will warm the overall color up and your top coats will stick well to it..I always hesitate to use poly on something like that because it doesn't touch up particularily well, and by the sound of it...you'll need to touch it up. But as long as you don't exceed 6 mils or so with your final film....you should be ok..
