ANTIQUE FURNITURE RESTORATION DISCUSSION BOARD

I am just getting started in refinishing antique furniture and am having a difficult time deciding abut finishes to use on a piece. I have a popular table (that was stained a dark stain )& was in bad shape so I stripped it . finding a wonderful golden popular wood undernewath. Now I'm in a dilema about what to use to finish it . I'm esthetically opposed to poyurethane - what oil / material would work for this & other woods - bringing out the lovely wood Thanks
