Roger is correct about the whack technique, the problem I run into is when the fastner has rusted in. The heat trick does work for rust I know. If you can't get a good grip any longer, then I like to use a drill bit to put a small hole in the center of the screw and then an easy-out, reverse thread tool to do the job.
