Because of the extreme conditions that a bar top goes through, alcohol, cigarettes, lots of soap and water, etc. your best bet is a very good quality spar varnish. Don't assume that a poly spar or varithane spar varnish is the same thing. Oil base is what would do the best job and is most likely what was on the bar top originally.
As a bar builder from way back, some photos would be very much appreciated. You show me yours and I'll show you mine, good luck James.
