If the bare wood is good enough quality, go with shellac. It is the most flattering finish for wood and is very hard to mess up - whatever problem you create can be recified with abrasives or alcohol, which is the solvent. Lacquer and polyurethanes look more plastic (mainly because they are plastics!) - especially poly's and can be more problematic and toxic for a novice to work with (assuming your finishing skills are somewhat rudimentary... no offense intended!). If in doubt about all this, try and find a (good) restorer locally who could do the finish work for you. Very often I find that some simple color work is called for in some areas - simple for a pro but not neccesarily for an amateur! Spray lacquer is cheaper but shellac is certainly more elegant and appealing.
