removing top layers of paint to original finish

I have a yard sale find that I have started to strip: a beaten up but hand planed jelly/kitchen cabinet that is covered by 5 layers of paint. I started work on the side and found that the bottom, original layer of paint appears to have a simulated wood grain painted on. Is there any way to strip the top layers of paint off without destroying the bottom layer (besides just guessing on how long I leave the stripper on and how hard to scrape)? The topcoat of paint is a latex applied without a primer and is a sticky mess. Thanks for any help!
