In my experience, walnut usually comes back to life beautifully without the addition of a coat of stain, let alone adding coat after coat of oil stain, unless you're trying to darken it or even the color. Old walnut, especially, can soak up stain like a sponge, and every successive coat will darken it more. After a thorough cleaning, you should be able to wet an area like one of the large panels, and get a good representation of what a finish will bring out in the color before adding any stain. Usually, the walnut will retain any slight bleaching, and patinas well, and require only a modest finishing regiment to make it look beautiful.If you're after an "antique" look, I would skip stain, and either apply a few coats of an Oil finish (Tung Oil),being careful to wipe down well after each coat has sit for 15 min's...and letting each coat dry 24 hours, followed by a dark paste wax. The more coats of oil you apply, the more sheen you will develop,... or a few coats of shellac (Garnet for color followed by Blonde for depth) lightly sanded with 400-600 between coats, then rubbed down with 0000 steel wool, and paste wax with a dark paste wax..(Fiddes black or Oak or similar), the end result being a mellow sheen, with a silky feel and retaining the original state of the Walnut.
