You will need to clean the wood, one area at a time, with 25% household amonia and hot water, to remove the dirt and any remaining finish. Wipe with 1/2 alcohol and 1/2 water, immediately after cleaning an area, wipe completely dry. Wait a day and lightly sand with 180 grit sand paper. Choose an oil stain color you wish to see, like medium walnut, begin rubbing the oil into the wood and work it with 0000 steel wool. This should revive the color and replace some of the missing oil. Allow to dry for twenty minutes and then wipe all the surface oil off the wood with clean dry rags, soak oily rags in water before discarding. Repeat this oiling until the wood won't absorb any more, this may need to take place over a 30 day period for a total of 4 or 5 coats. After the last oil has set-up for 2 days begin coating with a 2 Lb. cut of fresh dewaxed shellac. This would have been the traditional finish. Sand between all shellac coats, lightly, with 320 grit sand paper. Once you have a good build of finish you may want to knock back the sheen with 0000 steel wool, also a satin wax would have been traditional as the last procedure.
