You don't have to remove all rust, but you may wish you had later. Navel Jelly is good for this task. A thin black stain was used on the metal, I have found india ink to work as well as a black shoe stain in the bottel with the blotter brush on the cap.
The wood will not look a lot better with a filler, better to find a stain that will make the best effect. Some will accent the cracks, and others will say finish light to avoid them, it's up to you. I like to use a dark stain for age. A couple coats of spray lacquer will do, I prefer a satin sheen, then I will polish the metal a little to give it a higher sheen than the wood. Just cut a thin piece of cardboard to hold over the wood when you do this. Steel wool on the wood will make the contrats very dramatic and avoid the one sheen detraction effect.
I suggest you find a good shoe repair shop for the leather products. If they say all their products will work, go somewhere that knows that the old leather is very sensetive to the wrong product. No mink oil, and glycerine, and a mild stain to recolor without making the leather brittle.
