I wouldn't work too hard to remove all the stains...and the scratches will probably disappear with finishing, they add a lot of character...Chlorine bleach and water solution would probably work too, followed by a fine sanding when thoroughly dry....there's an oil called "Preserve" thats good..made of nut oils..I use it on all my cutting boards, but if you're not going to use these, then a thin coat of shellac and a beeswax polish might work well too...
