Restoring Butler Pantry

I have a 110 year old built in Butler's Pantry in my home which has been painted several times over the years. One of the latches is cracked and broken. I have a built in linen pantry upstairs that has the same hardware. The "pantries" don't really resemble each other in design. Is it important that all this hardware match? I would like to replace the Butler hardware with an antique set I found but don't want to ruin the "Overall" integrity of the house. There are four glass paned doors on the top and all the glass is OLD. One pane is broken. Should I replace all the glass with new or does this old glass make it more "antiquey"? While I am refinishing should I take all this glass out? It is all secured in place with wood "moulding like" type strips. I am afraid the stripping stuff will get down in there and damage the wood if left to sit for the next hundred years. What is the best stripping stuff?
