Yes fumes alone will make thin wood pliable. The concentration of amonia may slowly invade the finish, but a layer of masking tape will avoid the damage you mention. Glycerin might break down the hide glue. The darkening effect may only show on exposed or unfinished wood. I have used amonia soaked wood to achieve bending without steam as was done in the 1800's.
