ANTIQUE FURNITURE RESTORATION DISCUSSION BOARD

I have an old oak dining table which was covered with a dark varnish, that I've now taken off.
I would like to get the wood back to as near it's natural colour as possible and then cover it in some kind of wax or oil. However, in some places the varnish seems to have stained the wood.
Can anyone give me an idea of how to get the remaining traces of stain out of the wood and also what would be the best wax or oil to cover it with afterwards?
Any help will be much appreciated!
