restoring black walnut

I'm currently restoring black walnut woodwork throughout house. I'm taking it off the walls and planing it, then sanding it. Any suggestions on finishing techniques? I've been using poly but wonder if something else might be better/easier to use and give it a more natural look. Any info is greatly appreciated.
