The gouges may steam out using a wet rag and an iron set on linen or you may have to fill them. Putting a poly finish on will not prevent future damage, if the wood is soft it will still dent and gouge and you will have a broken finish that cannot be repaired. Minwax Antique Oil would be a better finish.
