Keeping patina in old wood.

Hi! Am new to the primitive look, but love it. Problem, how do I protect the old pieces as well as protect the patina. I want to be able to clean the piece, so it needs to be a little smoother than old and raw. I put polyeurathane on an old barn wood shelf that had grayed, and it turned brown. Also, how do I not get a shiny result? I used satin, and it shines. The result I want, look like it is old, but be protected and smooth enough to wipe off! Thanks!!
