Oak roll top desk

I am repairing / refinishing a large old roll-top desk(1870's. I will need to match stain to the original stain in some areas of repair. Is there a formula used on classic american oak desks. The reason I ask this is that I assume so many of these things are refinshed I thought someone might have a process already outlined. Thank, any help is good help.
