The veneer can indeed crack if not handled properly. You can use steam to soften the wrinkle prior to gluing, with hide glue. I will create a soft pad, and soften the veneer with steam and then lightly clamp, remove after an hour and repeat, till the veneer has regained the original shape. The glue can then be done safely, and if there is a lot of resistance, lift a bit extra to increase the availed space for absorbing the wrinkle, then glue back down. the back side really doesn't matter too much, but a perfectionist may want to hide all the new wood for what ever reason, and that's OK.
