How old is this piano?...stripper should've softened the glue if it's hide glue as James surmised...removing all the veneer and the glue completely is a huge job. A sharp cabinet scraper will often be a big help...if you're not familiar with them, they are a piece of tool steel that is sharpened in a specific way to yield a sharp and controllable edge for surfacing...not a paint scraper. If a wet finger rubbed on the glue doesn't get tacky/sticky in just a half minute or so...then you're dealing with a more modern/tougher adhesive... If the underlying construction is really maple, then you won't be affecting the sound too much by removing the veneer...that particular piano will be getting most of it's resonance and sustain from the maple...not the veneer.....but all the layers (woods, glues, veneers, finishes) do have some effect on the overall tone as James suggests..what is the veneer? Piano's are finished with many finishes as James states (among them lacquer and shellac)....but also including Varnishes, polyuerethanes, conversion varnishes , catalyzed lacquers and Polyesters ..the latter four being the most recent..pre 1929 for varnish and shellacs, post for lacquers....and the modern finishes only in the last 10- 20 years. As for polyurethane damaging sound...many modern, famous manufacturers use poly..the highly regarded German company C. Bechstein among them...and it strips much easier than conversion varnishes or the worst of them all...polyester, which is what almost all Black, and many other clear and colored pianos (and guitars for that matter) are finished with nowadays...and doesn't strip at all...
