Marilyn, First off you should probably try restoring the old finish. If it is still there it would be worth it. Give it a washdown with warm water and dish soap but don't saturate it! Do small ares at a time and dry as you go. Mineral spirits after that will remove any old waxes or oils. I would follow up that with Minwax Wood Cleaner and a coat of wax.

As to replacement parts you can get them at www.vandykes.com.

What I would be afraid of in stripping is the damage the chemicals might do to the tambour (roll top portion). I might eat the glue and remove the wood from the canvas backing. Making something look new isn't always the best option.
