The information that Greg has shared is all pretty much acurate, I don't agree about polishing poly, especially after a full cure has taken place, it won't shine like other finishes, and will not hold up to UV degradation. All that aside, the most beautiful thing you could do for a fine cherry surface is a nice amber shellac, the depth of the grain can't be surpassed. Also the tung single oil application with dryers, as you describe, won't hinder the application of a good shellac, in my opinion, as it was only one coat and has had a good while to dry. Proceed.
