Furniture Stripper

I have started a small business where I do Hand Caning, Press Caning and Rush weaving. I also do gluing and minor repairs. I have been asked to restore a chair. by that I mean that they want me to strip off the wax build-up and the Varnish or Shellac. They would like to keep the Patina . I have used some of the different Strippers from commerical stores like Home Depot but I just beleive that a distinguished group like this will have some wonderful secrets or techniques to help me out. What is a good stripper to use? Should I use a gel vs liquid? So the Old Man is looking for advice. Thanks and I remain a hopeful in the furniture restoration world.
