The regular practice of staining and finishing will be fine. You will need to take precautions when sanding the wood as some of the lead will still be present in the outer layers of wood. Once you have stained the wood use a sanding sealer and top coat like Deft. Your paint dealer will be able to help you find a compatable group of coatings for the desk. Avoid poly, and uretahnes.
