The acetic acid in the vinegar is what softens old glue. It works better if you can heat the vinegar and soak the glue for a while. Scrapping with a dull blade of a knife generally works pretty good. Just be careful not to score or gauge the wood. A brass bristle brush (the toothbrush style) helps to loosen the more tenacious and the hard to reach.
