The inside of your cabinet would have most likely either been unfinished or painted with milk paint. If the4 paint you are stripping comes of fairly readily with commercial stripper the the odds are that it is not milk paint and the inside was orignally unpainted. Leave it unpainted and put on a coat of past wax or seal with a couple of coats of 3# cut shellac then paint.
