refinishing inside of oak dish cabinet

My husband has nearly completed removing 4-5 coats of paint from an antique oak dish cabinet. It is put together with square nails if that gives an idea of its age. The inside is VERY dark, with no apparent finish. I would like to keep it as authentic as possible, but also clean/freshen it a bit. Would using a whitewash be inappropriate? Any suggestions/advice appreciated.
