Restoring Zinc and Tin

I am working on an early 1900's Boone Cabinet that has a large sifter (presumably tin) and on a possum belly Hoosier Cabinet with a zinc working surface. The sifter is a dull gray and has some rust spots in a few places and the zinc is gray as well. I have another cabinet with a sifter that I have completed and the sifter needed no restoration as it was very shiny. How can I polish the tin on this other sifter and is the zinc supposed to be shiny too? I am going to be displaying these in different parts of the house, so they won't necessarily be used for cooking. Thanks!
