If all the veneer is missing you will need to glue new veneer to the substrate. The substrate will have to be clean and sanded to 100grit then you can put new veneer on with hot hide glue. It takes some practice to learn to "hammer" veneer. You start by coating the entire piece with glue then work from the middle out wtih a squeegee "the hammer' until you have the entire top bonded. If the glue cools and sets before the veneer is completely hammered you can reheat the glue through the veneer with an iron. Depending on what color the pieces are now an what color you wwant them to be you may be able to tone them with a lacquer overspray ttha is a lighter color than the existing.
