what do to with wood innards of 1911 Estey Organ

The refinishing of the outside of the case of my Estey Organ is going well.

What do I do with the wood operational parts of the inside of the organ? The wood is intact, but stained by years of critters inhabiting there as well as it is just plain dry and brittle. Does it need to be sealed, or conditioned or something? How does one clean it without messing up the movements? I bought a book on restoring the organ, but it only mentions a spray wood filler - but I have searched all over and noone has heard of this. Charolette
