Fill a pie pan or any flat container with enough mineral spirits (paint brush cleaner) to a level below the screw.Cover w/plasic bag or foil and let sit for a day or two.The paint should be soft enough to take off with a rough plastic scrub pad.The yellowing could also been caused by cigarette smoke or normal kitchen vapors.If the knobs are too round to stand on their face, then poke holes in a cardboard cover to stand them up through.
