It sounds like you have a plaster on wood frame. The areas of missing gesso or plaster can be replaced with joint compound and sanded smooth at least to 600 grit then gessoed then gold leafed. If you have never gilded I suggest you trun the project over to a pro, it is not something that an amature can just pick up and do and the gold leaf is expensive to to learn on.
