Yes. Poly will stick to shellac, for that matter just about any finish will too. But if it were up to me I would choose a good Oil Base Varnish, since that will allow you to recoat when ever you wish, buff and or polish to any sheen you want, and is more resistant to water and UV than Poly on Shellac.
