Louis XV settee frame

We have a very old, ornately hand-carved Louis XV-style settee (similar to a fainting couch) frame made of a very lightweight and light-colored wood (the seller suggested it was fruitwood). When we purchased the frame, the wood was bare. While cleaning in the crevices of the carvings, we found bits of gold leaf under a clear lacquer. We would like to preserve the value of this piece and protect the wood. What finish would you recommend? Also the frame is in pieces about 1 foot long which will need to be glued together before reupholstering. What type of glue should we use?
