Old Canvas trunk Restoration

I recently acquired an old flat top trunk. The inside has already been stripped of all the paper. The outside has some areas where there is canvas that is still well glued down, but not in great condition and then other areas where the canvas has fallen off. If the condition were better, then I would leave the canvas intact, but the top has no canvas left and the other areas are pretty damaged. My question is what is the best way to remove the canvas that is still glued down well without damaging the wood. Also, I prefer not to remove all the hardware, so can the wood still be refinished? Finally, what are your suggestions for the inside. I know there are papers, but I have heard that paper is prone to wear and tear. The wood is bare now, what would be the best way to preserve it without paper?
