Forget the Ox blood and berry juice stories, for the most part they are folklore. Some Stains used early on (Pre 1850)were based plant matter(walnut shells for example) but most were based on chemical reactions within the wood when washed with them. As Jim says stains of this type were chemical dye stains in use since the mid 19th century.
