You can absolutely finish the table to the sam color as it was originally. Instead of a conditioner I like to use a wash coat of shellac to control blotching use a 1Lb cut and apply a very thing coat then stain without sanding the shellac. Layering stains is possible, but must be done carefully. I usually with use a glaze made from japan colors that can be wiped thin leaving little color then seal the glaze coat and apply a second if needed. This approach lets you senak up on the color rather than trying to get it all at wone time which can result in a muddy looking finish. Poly finishes should be confined to floors so that you do not see the plastic look that they have.
