There is no one book that will give you the information you are looking for. Fuming as you mentioned is a good way to start the process of matching old wood to new. You can also try staing with asphaltum particularly for the darker oak colors. Shellac in various colors can be padded on to give subtle shifts. Toners and glazes will also help to tweak a color to match.
