Sounds like a great table...one worth the time and effort.

If you're familiar with french polishing, I would try a couple of things first...you may not have to go to the trouble of a couple of spray coats.

I'd try a fairly aggressive cleaning with naptha and 0000 steel wool and followed by a light coat of paste wax first. If the depth an luster aren't to your liking, pad on a thin coat of a 2# mix of garnet. After a couple of passes, you can then make the choice to go to spray coats.... Either way, the surface that you will get would be a fairly good base to start your spray coats.
