Your problem may be that the oak in the table is white oak and you are trying to match it with a different wood red oak. The stains that you used are a combination of dye and pigment When you are trying to match new work with old pieces there is no set formula for doing it. I usually start with a stain that will get it in the general area then tone or glaze to get to the final color. One stain the can be made from asphaltum and mineral spiris seems to work very well on oak.
