gesso problem on antique dance hall lamp

I am restoring an early 1900's dance hall lamp. The cabinet was golden oak but had a dark brown stain. I removed the finish to the original oak, but there had been gesso used as wood fill. Now, I am trying to use a golden oak stain, but the gesso won't take the stain. How do I cover the gesso? Also, should I use shellac or varnish. Thanks. Mike
