It sounds like you may have not let some of the coats dry thoroughly before adding more. This can trap solvents in hte lower coats and may or may not ever dry since varnish requires oxygen to react with the resins for a cure. Give it some time and see if it will dry. If not you will have to remove it and rebuild the finish. Filling the grain with finish takes a very long time and does not give the same look as using a paste grain filler, also if the coats are not sanded back sufficiently you can end up with a finish that exceeds the thickness allowed for that material which will lead to an early finish failure.
